Meatballs & Spaghetti with Baked Broccoli, Gluten-Free + Dairy-Free

Traditional Meatballs & Spaghetti, but without the egg, gluten, bread crumbs...I hope it is not because I have been off the gluten so long, or the red wine, or because I made it, but I am confident this meal is fabulous!

Meatballs:
1/8 cup Ian's Gluten Free bread crumbs
1 tbsp minced garlic
1 tsp dried basil
salt
1/8 cup water
1 lb Ground Beef (85/15)
olive oil
1 jar of sauce (I used Classico Traditional Sweet Basil)

Mix the bread crumbs, garlic, basil, salt, and water in a bowl. Then add the beef and mix well. Put some olive oil in a frying pan on low. Start making meatballs (about 1 inch thick) and add to the frying pan. Cook slightly on all sides and then either add 1 jar of sauce and simmer 30 minutes OR put sauce and meatballs in a crock pot and cook 2 hours. I used the crock pot because of our busy schedule today.

Spaghetti:
Ancient Harvest Quinoa Spaghetti

Baked Broccoli:
Put pieces of broccoli on a baking sheet. Drizzle with olive oil and bake at 375 for 30 minutes.

Chicken Fajitas, Moros Rice, & Sangria

What goes well with Sangria? Yea, that's where I am starting tonight. I like my meals, drinks, and desserts to match. And tonight, all I care about is the sangria. And if you were walking by my house 10 minutes ago and heard me screaming you would have probably brought me a bottle yourself.

Sangria:
Red Wine
Lime Sparkling Water
Canned fruit with some of the juice

Chicken Fajitas:
Chicken breast tenders
Salsa
Tri-colored peppers, sliced long

I put them in the crock pot for 3 hours (so that they did not shred). But you can saute them in a pan. Put in corn tortillas and top with either quacamole, sour cream, or cheese. BTW if you buy "Fajita seasoning packets" in the store be very careful, they may contain gluten. Just add your own spices and seasoning if you have a gluten allergy.

Moros Rice:
1 cup brown rice
2 cups water
1 can black beans
1 tbsp minced garlic
1 tbsp olive oil
Salt

Put all the ingredients in the rice cooker. I think this is a cuban dish. If you are ever in a cuban restaurant, order this!! It is amazing. It is pretty much rice cooked in black beans.

Mexican Quinoa, Everything-free

 
I love Mexican food! I always joke that I could turn anything into a Mexican dish. And like almost everything else I make, I make Mexican food different every single time. Beans, corn, peppers, onions, salsa, avocado, chick peas, cucumbers, spinach, chicken, steak, cheese (regular or dairy-free), sour cream (regular or dairy-free). Mix and Match those ingredients and you have a Dani Mexican Meal. 

Tonight I am making a Mexican Quinoa. I make half the dish in the Rice Cooker.

In the Rice Cooker:
1 cup qunioa
2 cups water
1 can black beans
1 tbsp olive oil
Squeeze 1/2 a lime
salt

Once done, pour into a big bowl. Add your favorite Mexican ingredients. Tonight I am adding:
Diced chicken (leftover from last nights Slow Cooker Chicken Tacos)
Spinach
Salsa (use a fresh one, pico de gallo style)
Diced cucumber
Shredded Mexican Cheese (add after quinoa cools off)
And top your dish with a spoonful of sour cream

Mongolian Beef, Gluten-free + Sesame-free + Nut-free

We absolutely completely avoid asian food when we are with the kids. I am way too fearful of the nut and sesame contamination. Plus, I find soy sauce contamination has been the biggest problem for my gluten sensitivity. I heard Pei Wei has a gluten-free menu but due to nut and sesame oil we never took the kids. However, I finally ordered it for myself the other night. I had their gluten-free sweet and sour chicken. It was good but all I kept thinking was "I wish it was their Mongolian Beef". As I have said before, when I get a craving I MUST find a way to have it. So I started searching....

It didn't take long before I found a P.F. Chang's gluten-free Mongolian Beef recipe!! The only thing I have to take out is the sesame oil.

Heart Shaped Pizza, Gluten-free + Egg-free


I LOVE pizza and it is a day of LOVE.  A new FB/Blog friend told me about Bisquick Gluten-Free Pizza Crust. There is a recipe on the back of the Bisquick box.

I had to alter it a little and this is what I came up with...

Gluten-free + Egg-free Pizza Crust:
1 cup Gluten-free Bisquick mix
2 tbsp dried basil
1/2 cup of water
1/3 cup of olive oil
1/8 cup of ground flaxseed
1/8 cup hemp seeds

Mix and flatten on greased non stick cookie sheet. I made them into hearts tonight in honor of Valentine's Day. Bake at 425 for 15 minutes. Top with whatever you like. I did garlic, sauce, and cheese tonight. Bake another 10-15 minutes. After it was done cooking, I added arugula salad on top.

Delivery, Home Cooked, Allergy-Free Meals

It is sort of my dream come true! If I can't make my kids allergies go away, I hope for there to be companies that make my life easier. In the past, ordering in was a life saver. Now when we have a lot of guests over, I am torn between the risks of ordering in verse slaving in the kitchen all day. My newest discovery and answer to this dilemma is a company called Nutritious Family.

First, I spoke with Staci, the owner, and discussed our family's food restrictions. Second, she emailed me five choices of meals. She charges by the meal, either adult portion or child. Third, I emailed her my choices and how many of each. Fourth, 24 hours later it was delivered to our door in trays ready to put in the oven!!

I did this for my dad's birthday dinner. There were 11 of us and I ordered 11 adult meals, each came with sides.

Chicken Piccata with Cauliflower Mash & Asparagus
Spaghetti Squash Primavera with Turkey Meatballs & Antipasta Salad
Veggie Fried Rice with Chicken Satay
Italian Sausage Stuffed Peppers with Quinoa and Broccoli

Every single bite was fresh and delicious and for almost the first time I didn't have to worry about my kids or myself eating something we are allergic to. We could all eat every single thing on the table...and we did!! No one could figure out what their favorite was, we all liked everything. We even had a self proclaimed "foodie" at the table and she texted me this morning for the contact information.

You can either order their weekly meals, like I did, or use their other services which include personal shopping and cooking, chef lessons, kids lunches (for orders of 10 or more), and coaching (long distance or local).

Sneak in the Veggies...

How many ways can a mom sneak veggies into her kids' meals? A million.

Of all the food issues I have with my kids, getting them to eat veggies isn't one of them. However, I still find it fun to sneak veggies into their meals. If you aren't good at keeping fresh veggies in the house try and always keep some in the freezer. I went through a phase where we never ate veggies because I was sick of watching them go bad in the fridge.

Smoothies: You can put anything in a smoothie, according to me. Kale, spinach, carrots, celery, cucumbers, beets. Mask the taste with OJ and Berries and most kids will never know. Add avocado to make it creamy.

Tomato Sauce: Whether you make sauce from scratch or pour out of a jar you can always add veggies. I roast them first and then throw them in the Vitamix (or blender). Once pureed add the tomato sauce. I add carrots, celery, onions, peppers, eggplant, squash, broccoli, or cauliflower. Eat with pasta, meatballs, or on pizza. You can also add cooked ground beef and make it Meat Sauce.

Soup: Pureed veggies can be a soup all on their own. Last night I put cooked cauliflower, butternut squash, and carrots in the Vitamix with water and some spices and called it soup! The girls loved it. Vince wouldn't try it so I poured it over his turkey meatballs and he didn't notice. You can do this with any veggies you and your family like. Broccoli soup, pea soup, potato soup, corn soup, tomato soup, etc.

Meatloaf: My friend Debbi makes Meatloaf with a can of vegetable soup. If you don't have a can you like you can make vegetable soup in the crock pot. Add any diced or small veggies you want with a little water and cook a few hours. I would use peas, carrots, onions, diced potatoes, and peppers. Then mix the soup with meat, top with ketchup or Saucy Susan and bake at 350 for an hour.

Hamburgers: You can make different kinds of burgers by adding diced veggies to the ground meat (beef or turkey). For a Southwest Burger,  add corn, diced peppers, black beans, onions, and cheddar cheese (if you can). For an Italian Burger,  add tomatoes, peppers, onion, and mozzarella cheese (if you can) and top with tomato sauce after cooking. For a Greek Burger, add peppers, red onion, olives, and feta cheese (if you can). You can even make a Veggie Burger! I would add cornmeal to help it stick together.

Mac N Cheese: (Whole Foods has gluten-free and dairy-free options) I always add something random to a box of Mac N Cheese to make it a bit more healthful. You can add a few jars of baby food such as butternut squash, sweet potato, apple sauce, or winter squash. You can also add canned pumpkin, canned mashed yams, different flavored apple sauce, or anything else orange colored. Add it to the pasta when you add the cheese. I usually bake it in the oven for a little while so all the flavors mix with the cheese.

Spinach Dip: I guess you aren't hiding the spinach but kids will sometimes eat this. You can add avocado, kale, greek yogurt, and lemon. If you can have cheese, you can add swiss cheese, parmesan, cream cheese, or any other cheese you like. Bake at 350 for an hour.

Chocolate Coconut Pancakes, gluten-free + egg-free

When I told my mom that we are experimenting with taking Ava off gluten too, she said, "What about Pancakes!?!"

It took a while to find a pancake mix without egg, but now I had to find one without gluten. I bought Bisquick Gluten-Free Pancake and Baking Mix. And in typical Dani cooking fashion, I just started adding things.

Chocolate Coconut Pancakes:
1 cup Bisquick Gluten-Free mix
1 cup Soy milk
2 tbsp Vegetable Oil
3 tbsp Ground Flaxseed
6 tbsp water
1/4 cup Raw Shelled Hemp Seeds
3 tbsp Coconut Oil
1/4 cup Spectrum Essentials Decadent Blend (Chia & Flax Seed with Coconut & Cocoa)

I added the hemp seeds for some protein, ground flaxseed instead of egg, and the rest for fun!

It sounds super sweet but it actually wasn't. The coconut and cocoa blend just add a little character and made it exciting for the kids. You can top with butter & syrup or just some coconut spread.

Will even gave it the non-gluten-free person approval.

(BTW, This Coconut & Cocoa blend is amazing. I have been putting it in our protein shakes and in baking mixes. I found it at Whole Foods.)

Chicken Parmesan & Cauliflower Pizza, Gluten-free + Egg-Free

Hello Italian! Chianti is poured and kids are devouring dinner. (I am waiting for Will to eat but of course, I tasted).

I used to think Chicken Parmesan was for my dad, Chicken Parm-a-Jon. Sadly, my kids don't even know what it is. They could never have it. Bread crumbs usually have egg and sesame seeds, the cutlets are dipped in egg, and I hate standing over the stove frying. But tonight I decided to give it a try. I made a version without bread crumbs, without egg, and without frying.

Chicken Parmesan:
Chicken cutlets, pounded
Tomato Sauce
White Rice Flour
Ground Flaxseed
Coconut Oil
Plain Greek Yogurt
Spinach
Shredded Mozzarella Cheese

Preheat oven to 350. Mix some oil, greek yogurt, and water in a bowl. In another bowl, mix ground flaxseed and white rice flour. Dip the cutlets in oil/yogurt mixture, then flour/flaxseed mixture, and then put in greased pan. Bake for 45 minutes, flipping them after about 20 minutes. Take out and put tomato sauce, spinach, and shredded cheese on top. Bake another 15 minutes.

Cauliflower
Garlic
Shredded Mozzarella
Basil
Oregano
1 egg-I substituted 2 tbsp of ground flaxseed and 6 tbsp of water





Do not use parchment paper, mine stuck so badly I had to scoop the remaining dough off and rebake on a greased cookie sheet.

Once it was done, I topped the kids' pizza with sauce and cheese and mine with sun dried tomatoes, spinach, and goat cheese.

You need to eat this with a fork and knife but it is actually pretty good!

Brisket, gluten-free


Lately I have been talking to my mommy girl friends about how emotional our daughters can be. I always feel like I have to admit that I too was a highly emotional kid. A good example is the day I came home from high school and saw that my mom was making brisket. I don't know, I guess I just wasn't in the mood for brisket that day. I CRIED! I literally cried, tears and all. Yes, total brat. But the worst part is for years my mom assumed I didn't like brisket and stopped making it. That was not the case, I loved brisket, just not that day.

Ok, I promise after this I will start posting non-crock pot recipes but this is a good one. The brisket recipe I used to use required Lipton Soup mix, which has gluten. So I just made up another one...no special occasion, just in the mood for brisket.

Brisket:
Brisket
BBQ sauce (I use Sweet Baby Rays)
Saucy Susan
Coconut Oil

Put brisket in crock pot and put an equal amount of BBQ sauce and Saucy Susan to cover the brisket. Add some coconut oil. Cook 7 hours.

Serve with brown rice, or your side of choice, and Enjoy!

Gluten-free ideas

I keep hearing from people that they want to try cutting gluten out but don't know where to start. This is exactly how I felt. It wasn't until a doctor told me to try it for Vince that I felt motivated enough to start. Like I have said, he is no longer gluten-free but I am and it is worth it! I walked around for years feeling bloated and uncomfortable. I was asked frequently if I was pregnant because my belly was disproportionately big compared to my body. I am not saying that everyone should cut gluten out. Everyone knows their body best. But for those of you who want to decrease the amount of gluten or cut it out completely, here are some of my ideas.

Breakfast ideas..
Natures Path Chia Plus frozen waffles with Coconut Spread
Yogurt and gluten-free granola
Smoothies
Chex cereal with milk of choice
Eggs

Kids Lunch ideas..
Yogurt drinks

Apple Sauce

Edamame (I buy frozen and put it in a tupperware and it defrosts by lunch time)

Mini hummus (if no sesame allergy) and gluten-free crackers or pretzels

Super Bowl Sunday Ribs

Super Bowl Sunday Ribs, Chips, and Corn Muffins, gluten-free + egg-free + nut-free

Don't miss out on Super Bowl food today. Personally, it devastates  me when I can't eat the traditional food on a special day. And all week, with Super Bowl hype, I have had ribs on my mind. When I was pregnant people always asked what my cravings were. Pregnancy cravings were nothing new to me. I ALWAYS had cravings. Always have and always will. And this week, the craving is ribs. I made Will turn around last night, minutes from our house, to go buy a rack of ribs.

Along with slow cooked ribs, we are making homemade sweet potato chips and gluten-free corn, fig, and orange muffins (from the NY Times, sent to me by my first friend/best friend Eden). I am sorry if I overdose on the slow cooker, it is just so easy.

Ribs:
Rack of Ribs
Diced Garlic
Garlic Powder
Onion Powder
Brown Sugar
Salt & Pepper
BBQ sauce

Mix & Rub the dry ingredients on the ribs and place in slow cooker on their side. Rub the garlic on the ribs. Cook 7 hours. When done rub BBQ sauce on them and convection bake at 450 for 10 to 15 minutes.

Chips:
Sweet Potatoes
Salt
Olive Oil

Slice the potatoes in thin circles. Sprinkle with olive oil and salt. Bake at 400 for 75 minutes, or until crispy.

I, of course, substituted a few things. I also did not let the figs soak for an hour...too complicated for me.

Mommy Time, guilt-free

I frequently hear moms talk about feeling guilty about leaving their kids, guilty for wanting free time, guilty for taking care of themselves. Today, as I was finishing my yoga class, I felt inspired to remind myself and others about the importance of guilt-free mommy time.

When the girls were around one I spiraled down into a bad place. I had just stopped working, Will was really busy starting a business, and I did nothing for myself. I wasn't exercising, I didn't have a social life, and I didn't have a housekeeper (sounds spoiled, I know). But I was drowning in being a housewife and was very unhappy. 

This went on for almost a year. Thank God Will was working a lot because I was probably awful to be around. I remember being angry at him for getting a haircut. It was something I couldn't do without major planning and he could just do it, without even asking me first. I guess I was resentful that his life hadn't changed much and my whole life flipped upside down. 

All at once, my girls started preschool, I started exercising, and I went back to work part time. The blues were gone. It was the first lesson that I am the only one who can make me happy. Kids, husband, family are all part of my happiness equation but without myself it doesn't add up. There have been a few moments since then where I get back into the pattern of forgetting about myself. Every single time I start the downward spiral. Fortunately, I now know immediately what will cure the blues, Dani Time!

Date night, girls night, solo vacation, couples vacation, gym time, yoga time, taking a shower with the door closed and no one bothering me time.... These are the things that keep me happy. And when I am happy, my whole house is happy. Cliche but true. 

Take time for yourself and enjoy it...guilt-free.
