Chicken Parmesan & Cauliflower Pizza, Gluten-free + Egg-Free

Hello Italian! Chianti is poured and kids are devouring dinner. (I am waiting for Will to eat but of course, I tasted).

I used to think Chicken Parmesan was for my dad, Chicken Parm-a-Jon. Sadly, my kids don't even know what it is. They could never have it. Bread crumbs usually have egg and sesame seeds, the cutlets are dipped in egg, and I hate standing over the stove frying. But tonight I decided to give it a try. I made a version without bread crumbs, without egg, and without frying.

Chicken Parmesan:
Chicken cutlets, pounded
Tomato Sauce
White Rice Flour
Ground Flaxseed
Coconut Oil
Plain Greek Yogurt
Spinach
Shredded Mozzarella Cheese

Preheat oven to 350. Mix some oil, greek yogurt, and water in a bowl. In another bowl, mix ground flaxseed and white rice flour. Dip the cutlets in oil/yogurt mixture, then flour/flaxseed mixture, and then put in greased pan. Bake for 45 minutes, flipping them after about 20 minutes. Take out and put tomato sauce, spinach, and shredded cheese on top. Bake another 15 minutes.

Cauliflower
Garlic
Shredded Mozzarella
Basil
Oregano
1 egg-I substituted 2 tbsp of ground flaxseed and 6 tbsp of water





Do not use parchment paper, mine stuck so badly I had to scoop the remaining dough off and rebake on a greased cookie sheet.

Once it was done, I topped the kids' pizza with sauce and cheese and mine with sun dried tomatoes, spinach, and goat cheese.

You need to eat this with a fork and knife but it is actually pretty good!
